I had some grated cheese left over after last night’s Khachapuri so I decided to use it up this morning to make cheese muffins. The recipe was based on a Mary Berry one. I made a few changes, mainly leaving out the olives and using different cheeses.

I got most of the ingredients weighed out last night, ready to bake first thing this morning so we could have them for breakfast. The recipe I used was:

  • 275 g self raising flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 50 g melted butter
  • 1 egg
  • 250 ml milk
  • 100 g mixed grated cheese (cheddar, mozzarella, feta)
  • large pinch of chopped mixed herbs (we have a tub in the freezer which we add to whenever we buy or grow herbs)
  • 1 tbs red pesto

The flour, salt and baking powder were already weighted out and mixed together. Next I added the cheese and herbs. I beat the egg into the milk, started stirring it into the dry ingredients then added the melted butter.

I stirred the red pesto in, then put half the mixture into small cake cases and sprinkled some grated cheese on top. I added some chilli sauce to the rest of the mixture and put that into cases and put some chilli flakes on top so I could tell them apart.

Next time I thing I might leave out the herbs but add some diced onion, fried in butter of course.
