We don’t buy potatoes very often but we had some left over from when we cooked potato wedges a couple of weeks ago. I had been meaning to try making potato rosti and last night I finally had time to try.
I had a read of an article on the Guardian website and it gave several possible methods. The best way seemed to be boiling the potatoes first, the leaving them to cool before grating them. I didn’t have time for that.
What I ended up doing was grating the potatoes then squeezing out the excess water. I mixed the grated potato with some celery salt. I decided that since pre-cooked potato seems to work best, I would cook the grated potato first before frying so I shaped and flatted the rosti, then cooked them in the microwave for about a minute each before frying in a mixture of oil and butter.
I think it was a successful first attempt. They were crispy on the outside but still soft on the inside.
